What is the Difference Between Broth and Stock?


When to Use Broth

Broth is a noun. It means a savory liquid that has had meat cooked in it.

  • My recipe for tomato soup calls for one 32oz jar of marinara sauce and one 28oz carton of vegetable broth.

  • Making your own broth at home is as simple as putting various vegetables and meat scraps in a pot, filling the pot with water, and simmering it for up to two hours.

    When to Use Stock

    Stock is also a noun. It is very similar to broth, with a few key differences. Stock is typically left unseasoned. It is also cooked for a longer period of time (up to six hours). Most importantly, stock contains animal bones. When animal bones are cooked slowly, they release marrow and other substances into the water, which often makes stock richer and darker than broth.

  • Turkey neck and giblets are the main ingredients of a delicious turkey stock used to make gravy on Thanksgiving Day.

  • Beef stock is an important ingredient in many soups and stews.
