    Challenges

    Challenge 1 – Enzymes for Efficient Second‑Generation Bioethanol Production

  • Develop enzymatic solutions to release fermentable sugars trapped in insoluble fibre fractions after starch extraction from wheat and maize

  • Address lignin blockage to maximize sugar release and conversion into second‑generation bioethanol

  • Food‑grade solutions required

    Challenge 2 – Custom Alpha‑Amylase for Food Processing

  • Create custom alpha‑amylase enabling precise modulation of starch hydrolysis profiles

  • Must exhibit high thermostability and tolerance to broad pH ranges

  • Applications in food and specialized nutrition

    Challenge 3 – Releasing More Free Amino Acids from Plant Proteins

  • Develop enzymatic solutions that surpass current protein hydrolysis limits

  • Target higher release of free amino acids from corn and pea proteins

  • Approaches may combine complementary proteases or novel enzyme designs

  • Food‑grade solutions required
