Key Responsibilities
Lead daily production of Italian menus, including pasta, risotto, sauces, stocks, roasts, antipasti, and desserts for large-scale events.
Plan production schedules in collaboration with the Head Chef and Events/Catering Team.
Maintain consistent food quality, presentation standards, and portion control across large batches.
Ensure food quality is maintained during transportation, holding, and off-site reheating.
Train, supervise, and coach kitchen staff while maintaining high standards of discipline and professionalism.
Enforce hygiene, food safety, allergen management, labeling, and temperature-control procedures.
Monitor stock utilization, food costs, and kitchen waste.
Qualifications & Requirements
Diploma or Certificate in Culinary Arts, Food Production, or a related field.
5–8 years of professional kitchen experience.
At least 5 years' experience as a Sous Chef or in a senior supervisory culinary role.
Proven experience preparing authentic Italian cuisine, including fresh pasta, sauces, and traditional Italian dishes.
Experience working in a central kitchen, outside catering operation, hotel banquet kitchen, or other high-volume food production environment.
Strong knowledge of HACCP food safety standards, recipe standardization, portion control, and food costing.
Ability to work weekends, public holidays, and event days as required.
