Role Objective: To oversee the procurement of kitchen supplies.
To cook and direct preparation of all meals. (African & Continental dishes)
Responsibilities
Food products and ingredients costing
Oversee the preparation of all food types especially African Dishes
Develop and plan menus and recipes with the team taking into consideration seasonal availability of ingredients
Ensure that kitchen employees follow proper sanitation/hygiene practices at all times
Analyze recipe, assign prices to menu items, based on food, labor and overhead costs
Make requisition for kitchen equipment, supplies and materials as and when required
Assist management in the recruitment of kitchen staff
Investigate customer complaints about food and any meal served in the restaurant
Always check the quality and quantity of procured (raw materials) and cooked meals
Prepare the Rota for the kitchen staff
Demonstrate to the kitchen staff all the latest cooking techniques and equipment
Coordinate and supervise activities of cooks and workers engaged in food production
Help workers to resolve conflicts before they are escalated
Instruct kitchen staff in the preparation, cooking, garnishing and presentation of food
Regularly inspect kitchen facilities & equipment to ensure compliance
Qualifications / Education
Diploma in Food Production from a Recognized Institution
Analytical individual with the
ability to carry out costing/pricing competently
At least 2 years of continuous work experience in a busy restaurant
Excellent food handling and storage procedure knowledge
Ability to operate most kitchen equipment with ease
Knowledge in preparation of both African and Continental dishes
Computer Skills
