Emerge Egress Consulting Head Baker Jobs in Kenya


Role Objective

  • Lead bakery operations to ensure consistent production of high‑quality baked goods.

  • Manage bakery staff and foster a positive, disciplined, and high‑performing work environment.

  • Ensure compliance with food safety, hygiene, and HACCP standards.

  • Control inventory, monitor costs, and implement measures to maximize profitability.

  • Drive innovation through recipe development and seasonal product planning.

    Core Duties and Responsibilities
  • Plan, organize, and oversee preparation of breads, cakes, pastries, desserts, and other baked goods.

  • Develop new recipes and improve existing products in line with customer preferences and market trends.

  • Ensure products meet quality, presentation, and taste standards.

  • Prepare production schedules based on customer orders, forecasts, and inventory levels.

  • Monitor stock levels of ingredients and supplies, placing orders to prevent shortages and minimize waste.

  • Ensure compliance with food safety, hygiene, sanitation, and occupational health standards.

  • Monitor equipment performance and coordinate maintenance and repairs.

  • Implement cost‑control measures to improve productivity and reduce wastage.

  • Maintain accurate production, inventory, and quality control records.

  • Collaborate with management on seasonal products, promotions, and special orders.

  • Train, coach, and mentor bakery staff on SOPs and best practices.

  • Perform any other duties assigned by management.

    Job Specifications and Qualifications
  • Diploma/Certificate in Culinary Arts, Pastry Arts, or related field.

  • Minimum
    3 years’ pastry production experience in a busy hotel environment (Pastry Demi‑CDP or CDP).

  • Knowledge of HACCP standards.
