Our client, a market leader in Hospitality is urgently looking to hire talented and result oriented Bakery Specialist.
He/she will be responsible for bakery production planning, execution of the production plan, implementing food safety and hygiene, training all bakery staff, meeting productivity, shrinkage and sales targets for the establishment’s outlets and other matters by performing the following duties;To perform baking tests in the lab before the implementation on the industrial line in collaboration with production team
Duties and Responsibilities
Develop and implement world class standards in bakery section of the establishment’s store.
Work closely with the production manager to sustain bakery standards and quality.
Produce bakery items as per the recipe and plan/execute the production.
Make new recipes or improve the existing recipes as per the customer feedback.
Communicate well with the local staff, bakers and customers to enhance the local range offering
Introduce internationally favourite products and adjust the recipe according to local taste if and when required.
Create fresh bakery ambience inside the store.
Ensure all items are displayed and priced properly on bakery displays.
Inform customers about the new bakery products and makes recommendations.
Train local bakers to improve the bakery production quality and food safety standards and sales/display techniques.
Train counter staff for correct weighing and packaging of bakery products, monitor compliance.
Use and keeps bakery equipment and machinery clean at all times.
Ensure compliance of all food safety standards in bakery department.
Familiar with HACCP standards, preferably participated implementation actively.
Monitor ingredient stocks and place orders to meet production plan.
Accept customer orders and deliver at the required time and quality.
Monitor and reduce bakery wastage.
Monitor margin daily and ask Category Manager to update the cost if and when required.
Monitor and optimize the operating cost of bakery i.e. labor cost, overtime, packaging cost etc.
Monitor competitors in terms of range, quality and price and take actions to maintain competitive edge.
Other duties as assigned
Key Competencies & Qualifications
Bachelors Degree in Food Technology or similar bakery specific qualification from accredited culinary institution
5 years full-time equivalent bakery production experience
Expert in industrial processing (equipment, operating procedures & settings)
Expert in understanding the link: process/ingredient’s/end product/interaction Base
Strong baking and plant experience
Experience in Plant Baking of bread, Rolls and Confectionery
Understand functionality of ingredient’s/additives
Ability to prioritize multiple assignments
Ability to schedule tasks in order to meet delivery deadlines
Ability to be self-motivated with a positive attitude and a solid work ethic
