General Direct and coordinate activities of food and beverages division.
Provide general leadership and staff supervision under food and beverages division
Determine staffing requirements of the division in liaison with the General Manager.
Support the Departmental heads in ensuring that staff at F&B Division are fully engaged and
any emerging disciplinary issues are dealt with promptly and decisively.
To identify customer needs and promote customer recognition throughout the Division.
To regularly and systematically check standards and identify action for improvement.
To have a working knowledge of all aspects of Food & Beverages and maintain constant
involvement of self in tasks.
To respond to customer comments and feedback in line with the F&B Divisional policy.
To encourage a proactive culture to minimise all customer complaints.
To develop a culture to ensure consistent excellence in customer service.
To ensure rigorous systems of financial control and management are in place
Prepare daily, weekly, monthly quarterly and annual reports to the Hotel manage and give
explanations for any deviations.
To prepare detailed monthly reports to the HOTEL MANAGER of the F&B activities on or
before the 3th of every month.
Maintaining and defending the oath of secrecy in relation to sensitive information that he/she accesses in the line of duty without close supervision to do that.
Any other duty that could be delegated by the Hotel Manager from time to.
Main Job Tasks and Responsibilities
Setting of targets & objectives
Set operating goals and objectives for the F&B division.
Set targets with and for the heads of departments under F&B Division.
Staff organization
Oversee the operations functions of the F&B Divisional, as per the Organizational chart.
Provide effective leadership to F&B Divisional team members.
Maintain employee records.
oversee proper functioning of the F&B Divisional operations.
Schedule Shifts
To schedule shifts so that there are enough members of the team working to cover all
Working hours.
To be responsible for assigning duties
May help with serving customers or cleaning tables during busy periods.
Quality, standards & procedures
Oversee the preparation and implementation of standard operating procedures.
Oversee quality of food and beverage presentation.
Ensure that there are no wastages.
Determine and execute operational improvements.
Staffing, supervision & training
Assess staffing requirements and liaise with HOTEL MANAGER for recruitment staff when
needed.
Train and coach staff under your Division.
Manage staff performance in accordance with established standards and procedures.
Ensure staff under your division know and adhere to established codes of practice.
Prepare performance improvement plans and disciplinary documentation.
Ensure that employee related
issues are resolved in a manner consistent with the Hotel Hotel policies.
Mentor and develop hourly employees.
Education and Experience
A Diploma in hotel management with at least 4 years’ experience, two of which should have
been served at a senior position as head of department or Manager.
Any other diploma with relevant working experience of at least 5 years, 2 of which should
have been served at a senior position as head of department or Manager.
Previous experience in food and beverage management.
In-depth working knowledge of alcoholic and non-alcoholic beverages.
In-depth working knowledge of food preparation and presentation.
Experience in staff management and development.
Knowledge of basic accounting principles and practices.
Experience in analysing financial data.
Knowledge of planning and forecasting.
Track record of managing inventory and cost control.
Knowledge of administrative procedures.
Able to use relevant computer applications.

As a Food and beverage supervisor one will be expected to interact with customers. Being
friendly and courteous will help keep customers coming back.
customer satisfaction is key to a successful business, so the food and beverage manager
need to be courteous and professional at all times, answering questions and dealing with
complaints in an efficient manner.
Attention to Detail:
Will be expected to keep eyes on a lot of elements: food standards, costs, safety, etc.
Leadership:
One must be a leader in the back of house, rallying the team during heavy shifts, resolving
conflicts and getting the job done. There is need for strong leadership skills to give clear and
effective orders, keep up morale, and ensure that the team remains motivated.
Management Skills:
As a Food and beverage manager one will not only deal with food, but also have to deal with
costs, pricing, creating work schedules etc.
